Foodie Friday – Aubergines

I like to talk about food, mainly because I love food. I love to cook, to eat out. Discovering a great new recipe is my own brand of fun.

I, however, can not stand food shopping. It is expensive and time consuming. Supermarkets are horribly cold and without charm, but unfortunately something that has to be done.
I dream of being one of those “grow your own” women or at least a person on first name terms with my greengrocer, but I’m not.

We at CoolCrafting are all big fans of veg, with Aubergines being pretty high at the top of a list, so we thought we would start there (and because it starts with an A).

This week we were pleased to see Aldi had aubergines for 45p!

So we have been doing a lot with them and thought it might be nice to share with you all our favourite aubergine recipes from around the web

 

In our family Ratatouille is a must have freezer staple, we like it with fish or chicken as a main.  But mainly it gets used for lazy days to put on top of cheese on toast or in a bowl with crusty bread.

Another firm favourite is this Nigel Slater recipe.

Not only is it quick but it is packed with scrumptious simplicity.

I prefer it with tagliatelle, but that’s just me.

Today for lunch we had Aubergine, Tomato and Maasdam Cheese Wraps.

These also work great with Mozzerella, but there is something about the nuttiness of Maasdam that really pulls this whole thing together.

I like to marinate my Aubergines in a squeeze of lemon, some olive oil, a couple of basil leaves and a good helping of black pepper over night, but this recipe doesn’t require it.

Some people swear you have to salt Aubergines, I personally don’t unless the recipe says I must.

Serves 6.

Recipe

1 aubergine

2 tomatoes

6 slices of Maasdam Cheese

6 Tortillia Wraps.

Olive oil.

– Slice aubergine and tomatoes along the length.

– Simply fry the slices of aubergine and tomato until soft

– Place a slice of aubergine, then a slice of cheese, followed by 3 slices of tomatoes on to the tortilla wrap fold and grill for around 5 minutes, or until the cheese is melted and the wrap is golden.

– Salad to serve.

There really should be a picture of this but it got munched up before I could say “pass me the camera”
